I’ve recently become fascinated with mashing stuff together and eating it on toast. Today’s toast topping mash up experiment was particularly good so I had to share:
2 slices of toasted whole wheat artisan bread
1 small sweet potato, peeled and cubed
1/4 of a small onion, diced
2 sticks of celery, chopped
1 small clove of garlic
1 handful of fresh spinach leaves, chopped
1 handful of Daiya Mozzarella Style Shreds
a few dashes of hot sauce
Steam the sweet potato in a cm of water in a glass dish with a cover in microwave (I always avoid plastic cookware), for about 7 mins. or until soft. Halfway through I threw my chopped spinach leaves in with the sweet potato to wilt them. Drain this and mash with a fork.
Start your toast now so I’ll be just ready for your smashing mash.
Add the celery, onion, garlic, and Daiya Shreds to the spinach/sweet potato mixture and mash everything together well with a fork.
Add your amazing mash to your hot toast and top with your favourite hot sauce. Enjoy your power snack! I paired this will a big spring greens salad today for lunch.
